Steph's Buffalo Chicken Dip



       Yet again I am here to bring joy to people's lives. This dip is fabulous. Easy and fabulous. It's a Pintrest recipe from my Love the Side Dish board. The original recipe is from www.fabhousewife.com and the only thing I do differently is to use a rotisserie chicken instead of boiling one. I have brought this to potlucks and parties, it's always a huge hit. Sometimes my husband and I make it just to have something to enjoy for a couple of days.

Ingredients
  • 1 pound of boneless skinless chicken breast (I use the precooked chicken)
  • 1 Bottle of Franks Red Hot sauce (12 oz. or 1.5 cups) Franks is my fav fav favorite
  • 8 oz container of cream cheese
  • 1 cup Mexican cheese blend (or your favorite blue cheese or gorgonzola) I have also used cheddar in a pinch
  • 1 cup Ranch dressing.
  • 1 bag tortilla chips and/or veggies for dipping
Instructions
  1. If you don't have a rotisserie chicken or just prefer to make your own poach about 1 pound of boneless skinless chicken breast in chicken stock and water.
  2. Using 2 forks, gently thread chicken into small chunks. You can also shred your chicken in your (Kitchenaide) stand mixer using the flat, paddle beater.
  3. In a bowl, combine shredded chicken with Franks Red Hot sauce, to taste. 
  4. Let the chicken soak in the hot sauce until ready to use. The longer you let it soak the spicier it will be.
  5. Spread one 8 oz container of cream cheese into the bottom of an un-greased baking pan or casserole dish.
  6. Top with buffalo chicken...
  7. Sprinkle on some cheese. I like a mexican cheese blend, but you can also use blue cheese or gorgonzola.
  8. Finish it off by drizzling on some Ranch dressing.
  9. Bake at 350 degrees for 20-25 minutes, until dip is melted and bubbling.
  10. Serve with chips and veggies for dipping!

So delicious and really so easy. My husband makes it from memory now and we always keep celery on hand, just in case someone feels the need for a little dip. It has proven to be a very satisfying Gluten Free snack for Adrian because most dips are eaten with crackers or bread. We have used Fritos but the celery is our favorite. Happy snacking!
